Honey Sriracha Chicken and Waffles

Ingredients
For the Chicken
1 lb. chicken tenders
1 cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried mustard
1 teaspoon paprika
1 teaspoon garlic powder
2 large eggs, whisked
2 cups vegetable oil for frying (or use an air fryer)
For the Honey Sriracha Sauce
½ cup Fingerlakes Honey Company honey
½ cup sriracha
½ cup (1 stick) salted butter
2 tablespoons soy sauce
4 teaspoons fresh lemon juice
Pinch of red pepper flakes
For the Waffles
1 cup all-purpose flour
2 teaspoons granulated sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 cup sour cream
½ cup 2% milk
3 tablespoons melted butter (not hot)
1 teaspoon vanilla extract
1 egg yolk
1 egg white, beaten until fluffy
DIRECTIONS
Step 1: Prepare the Chicken
Preheat the oven to 400°F and set aside a baking tray.
Let the chicken sit at room temperature for 15-20 minutes before breading.
Set up three plates:
Plate 1: Mix the flour, salt, pepper, garlic powder, paprika, and dried mustard.
Plate 2: Whisk the eggs.
Plate 3: Leave empty for breaded chicken.
Dredge each piece of chicken through the flour mixture, then the whisked egg, and then back through the flour mixture again. (Flour → Egg → Flour).
Heat vegetable oil in a large pan over medium-high heat (target 350°F).
Fry 2-3 pieces at a time, flipping once golden brown. Place on a paper towel to absorb excess oil.
Transfer fried chicken to the baking tray and bake for 10 minutes or until the internal temperature reaches 165°F. Set aside.
Step 2: Make the Honey Sriracha Sauce
In a saucepan over medium heat, combine butter, sriracha, honey, soy sauce, and lemon juice.
Stir well and bring to a simmer. Reduce heat and let the sauce thicken slightly.
Step 3: Make the Waffles
Preheat waffle iron.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, sour cream, vanilla, melted butter, milk, and egg yolk.
In a separate bowl, beat the egg white until stiff peaks form, then fold it into the batter.
Spray waffle iron with non-stick spray. Pour batter onto the waffle iron and cook for 2-2½ minutes per waffle. Repeat until all batter is used.
Step 4: Assemble and Serve
Toss the fried chicken in the honey sriracha sauce until evenly coated.
Place one waffle on each plate and top with two pieces of chicken.
Serve immediately and enjoy!
